Pink Fir Apple Potato, Leek, & Smoked Bacon Soup by Andrew Reddan

Serves 6-8 | 30 mins prep

Ingredients

  • 750g Pink Fir Apple Potatoes, peeled, washed and chopped
  • 450g of Leeks, Chopped and well washed
  • 200g of smoked bacon, cut into strips
  • 1.5 Litres of Fresh Chicken Stock
  • 250ml of Cream
  • 50g Butter
  • Salt and Pepper to Taste

Method

Sauté the potatoes, leeks and bacon in a pot with the butter until soft and slightly brown.

Add the stock

Cook until the potatoes are cooked through.

In a blender, blitz all together.

Add the cream and season to taste.

Serve warm with fresh country brown bread.
