Ingredients

2 or 3 slices of Hickey’s Barm Brack

50g butter
-
100g Irish blue cheese
-
2 tablespoons toasted hazelnuts (or almonds or pinenuts)

4 good handfuls of Barefoot Farm fresh salad leaves

Olive oil
-
Apple cider vinegar
-
Salt
-
Pepper
Method
1. Heat the butter in a non stick pan and fry the brack until it’s crisp.
2. Break it up into pieces and allow to cool slightly.
3. Dress and assemble the salad, top with the brack croutons and the toasted nuts and serve.
