Stonewell Cider
Daniel and Geraldine Emerson of Stonewell, use pure apple juice from orchards in Waterford, Kilkenny and Tipperary (Con Traas's Apple Farm, one of our other food heroes!), All they add is a sprinkling of natural champagne yeast and a lot of passion to try and make the best real craft cider possible. Geraldine hails from the Loire region of Northern France, where her family has been making wine for centuries. Stonewell’s first cider blends were created with an old French press and apple mill, given to Daniel by Geraldine’s father some years ago. Five varieties of apples are used to make these carefully created blends, including cider apples which have the required tannins to give depth of flavour. Operations have progressed now more modern press is used, but its workings are similar to the original and the company’s produces three artisan ciders. The Emerson’s believe that in a world where people are more concerned about what they are consuming and how it’s made, a good craft cider should have its place.
