Red onions are slowly caramelised and then simmered in Red Wine and Port to intensify the flavours and produce this wonderfully rich, colourful and fragrant syrupy relish to complement almost any cheese. This incredibly rich red onion marmalade, with its deep red colour and subtle undertones, is great to partner up with your meat platters, pâté and with cheese. Or just on its own with fresh soda bread. Divine. For a tasty snack, try serving with cheddar or coarse pâté and freshly baked brown soda bread or ciabatta. Delicious with toasted sandwiches. A perfect accompaniment to steak or creamy potato mash. Try deep fried brie wedges with red onion marmalade on the side, or add to goats' cheese melted on top of crusty French bread.
